If I could eat just pasta for every meal every single day of my life (and not gain weight), I’d be the happiest person ever. Not a surprising statement, I guess, coming from an Italian. So, today I’d like to share with you my favorite pasta dish because it’s delicious, filling, and healthy!
At least three times a week I eat whole wheat linguine with green beans, parmesan, and olive oil. Adding a lot of green beans and just a little bit of pasta makes me feel like I’m eating a huge bowl of pasta, when it’s actually mostly green beans, which are really good for you.
The recipe is pretty straight forward: 8 oz of green beans (fresh), 2 oz of whole wheat pasta (Gia Russa), 2 tbsp of parmesan (Parmigiano Reggiano), 1/2 tbsp extra virgin olive oil (Colavita). Simply boil water in a small saucepan, add 1 tsp of salt, then boil the pasta and green beans for 10 minutes, drain, put into a bowl, add olive oil and parmesan, and mix! If you count calories, this dish is 340 calories.
